Whispering Angel is crafted from a blend of Grenache, Cinsault, and Rolle (Vermentino) grapes, sourced from the finest vineyards in the Esclans Valley and nearby regions in Provence . The grapes are harvested during the night to avoid the heat of the day, ensuring they remain fresh and vibrant. Upon arrival at the winery, the grapes undergo optical sorting to ensure only the highest quality fruit is used.
The production process begins with soft crushing, followed by temperature reduction from approximately 20°C down to 7-8°C to lock in freshness and vivacity. The grapes are then direct-pressed, which helps preserve the delicate flavours and aromas of the fruit. The juice is vinified in stainless steel, temperature-controlled fermentation tanks, where Batton age (stirring of the lees) is conducted twice weekly. This method minimizes oxidation and produces free-run juice, which is essential for maintaining the wine’s purity and complexity.
