Production: The Art of Capturing Freshness
The journey of “M” de Minuty begins with a carefully timed harvest. Grapes for the blend—primarily Grenache for its elegant fruit, Cinsault for its delicate freshness, and Syrah for a touch of complexity—are picked during the cool of the night or in the very early morning. This ensures they arrive at the winery at a low temperature, preserving their bright acidity and preventing any premature oxidation which could dull the flavours and colour.
Upon arrival, the winery employs the direct press (pressurage direct) method, which is key to the wine’s pale, delicate hue. The whole grape bunches are pressed immediately and very gently. The juice has only the briefest contact with the grape skins, just enough to extract a whisper of colour and subtle tannins, but not so much as to create a dark or heavy wine. This pristine, light-coloured juice is then fermented at low, strictly controlled temperatures (around 15-16°C) in stainless steel tanks. This slow, cool fermentation is vital for protecting the wine’s delicate floral and fruit aromas. Malolactic fermentation is blocked to maintain the crisp, zesty acidity that makes the wine so refreshing.
Aging: A Brief Rest to Preserve Youth
When it comes to aging, the philosophy for “M” de Minuty is simple: youth is paramount. This is not a wine intended for cellaring. The goal is to bottle the vibrant, expressive character of the grapes as quickly as possible.
After fermentation, the wine is kept in inert stainless steel tanks for a short period to settle and for the flavours to harmonise. During this brief maturation, it is often kept on its “fine lees” (sur lie). This process adds a subtle layer of texture and complexity to the palate without compromising the wine’s primary fruit character. Crucially, there is no oak contact at any stage; the purity of the fruit is the star of the show. The wine is then quickly prepared and bottled early in the year following the harvest to capture its aromatic intensity at its absolute peak, ensuring every glass tastes as fresh and vibrant as the St-Tropez coast itself.
Cinsault
Cinsault, often spelled as Cinsaut, is a charming and versatile red wine grape that originates from the southern regions of France.
In the vineyard, Cinsault is recognized by its dark green leaves and the little down that covers them underneath. The grapes are quite large, with a purplish-black color and firm skin
Cinsault produces fresh and fruity wines, with a floral touch that’s just as captivating as its fruitiness.
Grenache / Garnacha
Deliciously, round, fruity and heartwarming, grenache can be truly majestic when done well. Its likeability comes largely from its full body and sensation of sweetness which comes from its high levels of alcohol and glycerol. Expect plump, red fruits, black cherry, baking spice flavours and a hit of white pepper, developing into jammier, stewed fruit flavours in hotter regions.
Shiraz
Syrah, or shiraz as it’s known in the New World, is considered to be one of the great noble black grape varieties, because it can produce such deliciously dark, full-bodied and age-worthy wines.
Expect rich, brooding flavours of blackberry, black plums and blackcurrant, with spicy, coffee, leathery and liquorice notes in hotter regions and gamey, truffle notes developing with a bit of age.
