Production Process
The winemaking begins with estate-grown fruit, often harvested in the cool of the night or early morning to preserve natural acidity and fresh aromatic profiles. The grapes are crushed and undergo fermentation in temperature-controlled stainless steel tanks. This allows the winemakers to manage the extraction of color and tannin precisely, ensuring the wine remains “fruit-forward” rather than overly astringent. A key step in its production is the use of malolactic fermentation, which converts tart malic acid into softer lactic acid, giving the wine its signature creamy, approachable mouthfeel.
Aging and Maturation
Following fermentation, the wine is matured using a combination of French and American oak. While some premium tiers from Salena Estate may spend up to 24 months in barrels, the standard Overland Shiraz is typically aged for a shorter period to ensure the oak complements rather than overpowers the bright blackberry and plum flavors.
American Oak: Lends the wine its characteristic notes of vanilla, coconut, and sweet spice.
French Oak: Adds structural elegance, fine-grained tannins, and subtle savory notes like cedar and tobacco.
The result of this balanced aging process is a wine that is ready for immediate consumption but possesses enough structural “backbone” to be cellared for 3 to 5 years, during which the fruit and wood components continue to integrate and soften.
