The production of Fat Barrel Cabernet Sauvignon Shiraz begins in the vineyard, where the grapes are carefully cultivated. The Cabernet Sauvignon grapes thrive in well-drained, gravelly soils with plenty of sunlight, while the Shiraz grapes prefer slightly warmer climates. Vineyard managers meticulously monitor the vines, ensuring optimal growth conditions through pruning, canopy management, and regular tasting and testing of the grapes.
Once the grapes reach the perfect balance of sugar, acid, and flavour, they are harvested. The timing of the harvest is crucial, as it significantly impacts the wine’s flavour profile. After harvesting, the grapes are sorted, destemmed, and crushed to release the juice, or must. The must is then transferred to fermentation vessels, where yeast is added to initiate fermentation. This process converts the sugars in the must into alcohol and carbon dioxide
