Production: The grapes for this blend are sourced from low-yielding, old, dry-grown bush and trellised vines situated on limestone soils in selected vineyards across the Barossa Valley. Each varietal—Grenache, Shiraz, and Mourvèdre—is harvested at optimal ripeness and vinified separately to capture the distinct characteristics of each grape. The fermentation process is carried out in open-top fermenters, a traditional method that enhances the extraction of flavors, colors, and tannins. This technique allows for meticulous control during the fermentation, ensuring that each component of the blend develops its unique profile.
During fermentation, the cap (the thick layer of grape skins, seeds, and stems that rise to the top) is regularly punched down and pumped over to maximize extraction. This labor-intensive process ensures that the wine gains depth and complexity from the skins and seeds, contributing to its rich color and robust structure.
Aging: After fermentation, the wine is carefully transferred to old French oak barrels for an aging period of eight months. This aging in seasoned oak allows the wine to mature gracefully without overwhelming it with strong oak flavors. Instead, the old oak imparts subtle notes of vanilla and spice, adding layers of complexity while preserving the purity of the fruit. The oak aging process also helps to soften the tannins, enhancing the wine’s texture and mouthfeel.
Throughout the aging period, the wine undergoes regular racking, which involves gently transferring the wine from one barrel to another to separate it from the sediment that forms during maturation. The Henschke family have been making wine at their estate in the Eden Valley since 1868. Fifth-generation winemaker Stephen Henschke took over running the winery in 1979. Together with his viticulturist wife Prue, they have taken their two single vineyards, Hill of Grace and Mount Edelstone, and transformed them into two of Australia’s most sought-after wines. Through a combination of great viticulture from Prue, who is at the forefront of re-introducing native plants into their vineyards to improve biodiversity, and winemaking from Stephen, they have built upon their inheritance and turned this traditional producer in to one that is celebrated all around the world.
Grenache / Garnacha
Deliciously, round, fruity and heartwarming, grenache can be truly majestic when done well. Its likeability comes largely from its full body and sensation of sweetness which comes from its high levels of alcohol and glycerol. Expect plump, red fruits, black cherry, baking spice flavours and a hit of white pepper, developing into jammier, stewed fruit flavours in hotter regions.
Shiraz
Syrah, or shiraz as it’s known in the New World, is considered to be one of the great noble black grape varieties, because it can produce such deliciously dark, full-bodied and age-worthy wines.
Expect rich, brooding flavours of blackberry, black plums and blackcurrant, with spicy, coffee, leathery and liquorice notes in hotter regions and gamey, truffle notes developing with a bit of age.
