Immediate Pressing: The grapes are harvested and pressed to obtain “must” (fresh grape juice).
Cold Preservation: This must is immediately placed in cold storage at near-freezing temperatures. This crucial step prevents yeast from starting the fermentation process, ensuring the beverage remains at 0.0% ABV naturally.
Carbonation & Bottling: When ready for bottling, the juice is gently carbonated to create its signature fine mousse (bubbles). Because it never fermented, it retains the pure, unadulterated primary aromas of the Glera grape—something often lost in de-alcoholized alternatives.
