VINEYARDS The Primavera family have been involved in grape growing in the Riverina for 40 years. After discovering Yarra Valley wines 25 years ago through his involvement in the family wine shops, Lou Primavera planted this vineyard in Woori Yallock in 2001, lying at 230 metres above sea level. The 12 hectare vineyard is planted on north/north-east facing slopes and the soils are red clay loam, which play a critical role in shaping the complex structure and pronounced perfume of this wine. Giant Steps has a long-standing relationship with the Primavera family, having sourced fruit from the vineyard for many years. It is testament to the increasing quality of this site that they are now producing a single vineyard Pinot Noir from Primavera. The vineyard is planted with clones 114, MV6 and G8V3.
VINIFICATION The fruit was hand picked and hand sorted in both the vineyard and winery. All of the fruit is chilled overnight to 12°C. The 115 clone was transferred to open top oak vats as whole bunches, while the MV6 was destemmed for a cold soak for five days, then allowed to warm gently into a wild ferment. All vats underwent indigenous yeast fermentation. Separate batches were blended and moved to 25% new and 75% used 225L French barriques for eight months. The wine was bottled by gravity, without fining or filtration.

Pinot Noir
At first glance, most Pinot Noir wines are pale to medium in color due to their thin skins. Pinot Noir has a unique profile dominated by aroma compounds known as esters. These give it a complex array of flavors, from ripe cherry and raspberry to intriguing undertones of forest floor, tea leaves, and sometimes even clove.
On the nose, Pinot Noir is all about the symphony of red fruits. Yet, it also unveils layers of earthiness, spice, and, when oak-aged, gentle wafts of vanilla and smoke. As it ages, you might catch hints of mushroom and leather.
On the palate Pinot Noir is usually light to medium-bodied, with lower tannins (thanks to those thinner skins) and high acidity, making it a wine of grace and subtlety. The alcohol levels tend to be moderate, usually around 12-14%, contributing to its silky and elegant mouthfeel.
