The Arbois Trousseau Les Corvees Touraize 2015 is crafted with meticulous attention to detail, reflecting the dedication of Domaine de la Touraize to producing exceptional wines. The vineyard, located in the southwest-facing hillside of Arbois, benefits from gravelly soils over marl, which are ideal for the Trousseau grape variety. The vines, aged between 20 to 45 years, are carefully managed using organic farming practices, including cane pruning, disbudding, and ploughing between rows to maintain soil health.

The grapes are hand-picked and undergo a gentle destemming and light crushing process. Fermentation is carried out using indigenous yeast, with a cold pre-fermentation maceration for two days followed by a 30-day maceration on the skins. This delicate extraction process ensures the wine retains its supple and lithe character.

Aging is split between 600-liter wooden barrels (demi-muids) and stainless steel vats, with half the blend spending nine months in each. This combination of aging methods contributes to the wine’s subtle balance and complexity. Before bottling, the wines are blended, and a minimal amount of sulfur dioxide (20 ml/hl) is added for preservation.

In 1985, I decided to join my father and like him, I joined the cooperative. I started out with 30 acres of vineyards and the estate has since thrived; I now have 15 ha. In 2009, I decided to leave the cooperative and take the fate of my grapes into my own hands, from the vineyard to the bottle. I sold three ha of vineyards to fund part of my project, including the construction of a vat room in 2011, a cellar in 2014, and a tasting area in spring 2015. In 2016, my wife Héléana, quit her job as a nurse and joined the estate.
