Cape Cornwall White Rum offers a vibrant, crisp profile, leveraging its charcoal-filtered aged base to deliver surprising depth without any heavy weight.
Aroma & Nose The nose opens with bright, clean notes of fresh sugarcane, lime zest, and green banana. Beneath the crisp citrus and fruit top notes lies a gentle whisper of soft vanilla, coconut water, and a subtle grassy freshness that gives the spirit an inviting tropical bouquet.
Palate & Mouthfeel On the palate, it is remarkably smooth and supple, benefiting from its blend of charcoal-filtered aged Trinidadian rums. Initial flavors of light vanilla cream, candied lime, and juicy tropical fruit transition into a clean, mineral dryness. The mouthfeel remains light and refreshing, completely free of harsh spirit burn.
Finish The finish is short, clean, and crisp. It leaves behind a lingering hint of citrus oil, light oak spice, and a delicate sugarcane sweetness that vanishes cleanly on the back of the palate.

Base Spirit & Caribbean Origins
Trinidadian Blend: Formulated using a blend of 2-year-old and 5-year-old steel pot-distilled rums sourced from Trinidad.
Charcoal Filtration: The aged rum undergoes charcoal filtration to strip away wood color while retaining its vibrant, fruit-forward character and velvety smooth mouthfeel.
Cornish Crafting & Finishing
Local Spring Water: Cut down to a crisp 40% ABV using fresh, naturally filtered spring water drawn directly from Bollowal Farm at Cape Cornwall.
Crafted at “The Wink”: Blended and hand-bottled in the farm’s historic 18th-century smuggler building overlooking the Atlantic ocean.
Aged Spirit Depth: Unlike basic unaged silver rums, the inclusion of charcoal-filtered aged liquid gives it extra body and complexity without adding color.

Place and memory are inherently interlinked throughout the cornish landscape. At Sithney, the ancient and the modern meld in the present, creating links to the past and a grounding in place and identity.
Named after Saint Sithney who came to Cornwall as one of a band of Irish missionaries. Legend states that God asked Sithney to be the patron saint of women seeking husbands, but Sithney retorted that he would never get any rest and so instead became the patron saint of mad dogs!
History is entrenched in every aspect of Sithney, even below the ground as the landscape is peppered with mines, some of which go back as far as Tudor times- the most renowned being the Great Wheal Fortune mine. Many generations of Cornishmen toiled in these pits, producing copper, zinc, arsenic, tungsten and tin. It is said that in the 1950s, a lone minor was seen to be working in the burrows, taking two sacks of Wolfram daily to the nearby village of Camborne to sell. And so, the wheel of fortune turns and, like the rotations of the hands of a clock, time has brought a new spirit of creativity and pride to the small parish – Saint Sithney Distilling co.
