Aroma & Nose
The nose opens with soft, inviting aromas of honeyed oak and sweet vanilla, accompanied by warm caramel and dried tropical fruit like banana. Beneath the traditional cask-aged sweetness, there is a subtle hint of rich cocoa and a fresh, grassy nuance that gives the bouquet a bright, natural lift.
Palate & Mouthfeel
On the palate, the rum is medium-bodied, velvety, and exceptionally smooth. An initial layer of rich chocolate and golden syrup unfolds across the tongue, grounded by toasted oak and soft brown sugar. As the spirit settles, notes of ripe banana and gentle baking spice emerge, balanced by subtle vegetal and grassy undertones that prevent the profile from becoming overly sugary.
Finish
The finish is warm, lingering, and elegantly dry. As the cocoa and molasses sweetness recedes, it leaves behind a trace of toasted oak, soft spice, and a clean mineral softness derived from the natural Cornish spring water.
The history of Cape Cornwall Rum is tied to 18th-century coastal smuggling along the rugged headland of West Cornwall.
Smuggling & “The Wink”
During the 18th and 19th centuries, steep government taxes made Cape Cornwall a hotspot for bringing illicit rum, brandy, and tea ashore. Contraband was hidden in a secluded building on Bollowal Farm known locally as “The Wink” to evade customs officers.
The 1925 Discovery
In 1925, the great-great-grandfather of brand co-founder Harvey Thomas discovered a cache of historic smuggled spirits built directly into the stone walls and fireplace of his farm cottage.
Modern Revival
Inspired by the hidden wall bottles, Harvey Thomas and Jack Shannon launched the Cape Cornwall Rum Company in 2019. They repurposed “The Wink” on the family farmstead as their blending and maturation space, using Caribbean rum bases and fresh spring water drawn directly from the farm

Place and memory are inherently interlinked throughout the cornish landscape. At Sithney, the ancient and the modern meld in the present, creating links to the past and a grounding in place and identity.
Named after Saint Sithney who came to Cornwall as one of a band of Irish missionaries. Legend states that God asked Sithney to be the patron saint of women seeking husbands, but Sithney retorted that he would never get any rest and so instead became the patron saint of mad dogs!
History is entrenched in every aspect of Sithney, even below the ground as the landscape is peppered with mines, some of which go back as far as Tudor times- the most renowned being the Great Wheal Fortune mine. Many generations of Cornishmen toiled in these pits, producing copper, zinc, arsenic, tungsten and tin. It is said that in the 1950s, a lone minor was seen to be working in the burrows, taking two sacks of Wolfram daily to the nearby village of Camborne to sell. And so, the wheel of fortune turns and, like the rotations of the hands of a clock, time has brought a new spirit of creativity and pride to the small parish – Saint Sithney Distilling co.
