Born in Soho’s 2000s Cocktail Scene

The drink was invented around 2003 by bartender Ross Simon while working at the legendary LAB bar (London Academy of Bartending) in Soho, London.

During the early 2000s, London was the epicenter of a major cocktail renaissance, and LAB bar was famous for pioneering fun, fruit-forward, nostalgic drinks (the same era and scene that birthed the Pornstar Martini). Simon wanted to recreate the exact flavor contrast of his favorite childhood ice cream bar in liquid form.
