Harvesting is done exclusively by hand to ensure the delicate skins of the Albariño grapes remain intact, preventing premature oxidation. Once at the winery, the grapes undergo a gentle pressing, followed by fermentation in temperature-controlled stainless steel vats. This cold fermentation is critical, as it preserves the volatile primary aromas of white flowers and stone fruits that would otherwise be lost to heat.
Aging: The Secret of the “Fine Lees”
What sets Gotas de Mar apart from simpler, leaner white wines is its dedicated aging period “sobre lías” (on the lees).
