Pressing & The Craft of Fermentation
The creation of Rattler Zero begins at Healeys Cornish Cyder Farm in Penhallow, Cornwall, during the autumn harvest from September through December. Tons of locally sourced apples—a blend chosen for their balance of natural sweetness, sharp malic acid, and rustic tannins—are washed, mashed, and pressed on-site.
What sets Rattler Zero apart from many non-alcoholic ciders is its approach to fermentation. Rather than fermenting a full-strength cider and using harsh dealcoholisation techniques (which often strip away delicate top notes and body), Healeys uses a proprietary, custom-developed fermentation process. The fresh juice enters 50,000-litre, temperature-controlled stainless steel vats held precisely around 21°C. Here, specialized yeast works just long enough to develop authentic cyder esters, subtle funk, and a characteristic bite, while yeast activity is strictly controlled to cap the liquid at 0.5% ABV.
Conditioning, Maturation & Thermal Stabilization
In traditional cidermaking, high-ABV ciders are often aged for long periods in oak vats to allow heavy tannins to polymerize and soften over time. For a crisp, fruit-forward non-alcoholic cider like Rattler Zero, however, standard barrel aging could dull the bright, punchy apple character.
Instead, Rattler Zero undergoes a delicate, highly monitored tank-conditioning phase. The cider rests in steel storage tanks just long enough for sharp acidity to smooth out, for residual unfermented fruit sugars to integrate with natural astringents, and for fine particulates to settle. Once peak flavor harmony is achieved, the cider undergoes tunnel pasteurization on the bottling line. This thermal step permanently halts any remaining yeast, locking in its orchard-fresh vibrancy, effervescence, and signature Cornish character at its absolute prime.

The Distinction: Rattler Zero scored an impressive 95/100, earning a Gold Medal and emerging as the highest-scoring low-alcohol cider in the competition.
Judges’ Tasting Notes: Panel judges highlighted its “lightweight, refreshing, and fruity” profile, complimenting it as being “elegant, fine-tuned and finessed, with a lovely balanced sweetness.”
