The Mai Tai is a classic Tiki cocktail that combines the strength and character of rum with fruity sweetness, rich almond, and tart citrus.
In 1934, Victor Jules Bergeron, better known as Trader Vic, opened his first restaurant in Oakland, San Francisco. His restaurant served Polynesian cuisine, blending Chinese, French, and American dishes cooked in wood-fired ovens.
The legend goes that in 1944, Trader Vic tested a new drink on two friends from Tahiti, Ham and Carrie Guild. After the first sip, Carrie exclaimed, “mai tai-roa aé,” which in Tahitian means “out of this world – the best!”
The Mai Tai Cocktail was introduced in Hawaii in 1953 when Bergeron created a cocktail menu for the Matson Company hotels—the Royal Hawaiian Hotel and Moana Hotel.
