Production: The grapes are hand-harvested from select vineyards situated on the volcanic soils of the slopes of Mt. Vulture in Basilicata, at elevations up to 800 meters. This high altitude contributes to the development of the grapes’ intense flavors and aromas. The must undergoes pre-fermentation maceration at 4°C (39.2°F) for five days, which helps in extracting color and flavor from the grape skins. This is followed by alcoholic fermentation for 7-10 days at 22°C (71.6°F).

Aging: After the completion of malolactic fermentation, which softens the wine by converting sharper malic acid into smoother lactic acid, the wine is aged in barrels for eight to ten months. The choice of barrels, whether new or old, influences the final taste, imparting subtle oaky notes and complexity to the wine. In recent years, there has been a movement towards the use of new French oak barrels for aging, instead of large chestnut casks. This shift is likely to enhance the wine’s structure and add refined tannic profiles.

The result of this careful production and aging process is a wine with a lovely structure and ripe tannins, making for a young yet appealing expression of this noble wine.
